The Flour Durum Wheat Donna Tina is obtained by grinding a mixture of durum wheat grown in our company including the ancient variety Senatore Cappelli historical varieties of durum wheat, which gives an intense aroma to the product.

From the grinding of the grain of durum wheat you get the durum wheat semolina. The durum wheat semolina is characterized by a coarser granularity and has a yellowish tinge and is mainly used in pasta making for pasta production.

Durum wheat flour contains more protein, has a lower glycemic index and is rich in carotenoids useful for binding and eliminating free radicals (antioxidants).

Senatore Cappelli durum wheat is 160/180 cm tall, it is a rustic and not very productive variety but it provides an excellent semolina for the production of bread, pizza and pasta.

Senatore Cappelli durum wheat contains higher percentages of vitamins, lipids, amino acids and minerals. Durum wheat Senatore Cappelli has never undergone alterations, genetic manipulation and mutagenic contamination induced by X-rays and Y of cobalt, today present in modern grains used in agriculture. From studies conducted, the hypothesis is that the genetic manipulation of modern grains leads to the modification of a protein called gliadin which involves inflammatory enteropathy and therefore a mismatch with the increase in gluten intolerances and allergies.

Senatore Cappelli durum wheat is more digestible than other types of wheat.

The selection of Bread and Italian Pizza is obtained by a slow grinding of the grain of wheat and has a medium-fine grain size. Thanks to the technique used in milling this flour allows to keep intact the properties of the grain of wheat. It has an ideal granulometry for the preparation of short-lasting dough and maintains the right balance between taste and leavening capacity.

  • Bread and Italian Pizza: use our flour as the only ingredient to prepare the dough by adding the water gradually until the dough is elastic and does not stick to the hands.
  • Sweets: use our flour as a main ingredient for the preparation of tasty desserts in the dose indicated by the recipe.
  • Italian Pasta: use our flour as the only ingredient for preparing pasta adding water until the dough is elastic and does not stick to the hands. We advise against the addition of eggs because this type of flour gives an excellent seal both during processing and during cooking.
